Maamoul and Arabic Biscuits, Handcrafted in the UAE
Mamoul looks like a simple cookie, but anyone who has made it at home knows otherwise. The dough must be buttery enough to melt but firm enough to hold its shape, and the date filling needs to stay soft without turning sticky. We press and shape each one by hand. At Cake Al Taybeen, we still make ours that way, alongside the pistachio shortbread and assorted biscuits that have filled cookie tins in this region for generations.
Mamoul goes by many spellings (maamoul, ma’amoul, mamool), but the idea never changes: a buttery shortbread wrapped around a filling of fresh dates. We bake two styles of maamoul cookies, because families tend to be loyal to one or the other.
Two Kinds of Mamoul Cookies in Dubai, Both Filled With Dates
- Moroccan Mamoul: Soft and tender, made with rich butter and a touch of nutmeg, then filled with fresh dates. It’s the gentler of the two, and it pairs perfectly with tea. Available in 500 g boxes.
- Palestinian Mamoul: Made with a blend of semolina and butter, so it has a slightly sandy, crumbly bite that breaks apart when you take it from the box. The filling is fresh dates. Available in 250 g and 500 g boxes, depending on how many guests you’re expecting (or how many you plan to keep for yourself).
These are the mamoul cookies Dubai families stock up on before Eid, but they don’t sit on the shelf the rest of the year either. If you’re not sure where to start, try both and settle the debate at home. When you want maamoul in Dubai that you can put out the moment the doorbell rings, a 500 g box is the easiest place to begin.
Ghoraiba Biscuits: The Cookie That Crumbles on Contact
Depending on who taught you, you might know it as ghraiba, ghoraiba biscuits, or ghraybeh. The spelling varies from country to country, but the cookie is the same: a very light butter shortbread, so delicate it almost dissolves on your tongue. We finish each one with a peeled pistachio.
Ghraiba is often the cookie children remember best, mainly because it disappears so quickly.
More Biscuits for the Tin
Along with the classics, our Arabic biscuits UAE-based customers keep coming back for include:
- Nutella biscuits: creamy assorted biscuits sandwiched with a layer of Nutella. They’re popular with younger guests and anyone who likes a modern twist on the cookie tin.
- Petit four: small butter biscuits in mixed flavors, some with jam in the middle, for times when you want a few small bites rather than one large one.
- Jam Biscuit White: Buttery biscuits with a bright spoonful of jam in the center. The generous 500 g box is ideal for a full coffee table or a week of afternoon tea.
For something beyond biscuits, our Arabic sweets range includes baklava, Chocolate Rangena, and Aseeda Egali Bites.
Boxes Made for Giving
Mamoul has always been a gift as much as a snack. It goes to neighbors at Eid, comes along on family visits, and ends up packed in suitcases for relatives abroad. Our Assorted Mamool Tray brings together pistachio ghraiba, Moroccan mamoul, and Palestinian mamoul in a single box, so the person receiving it doesn’t have to choose.

Frequently Asked Questions

Moroccan mamoul is softer and more buttery, with a hint of nutmeg. Palestinian mamoul uses semolina, which gives it a firmer, crumblier texture. Both are filled with dates.
Definitely. If you're looking for date cookies in Dubai, start with our Moroccan mamoul. It's soft and not too sweet, which makes it an easy introduction.
Keep them in an airtight container in a cool, dry place, away from heat and direct sunlight. In the summer months, avoid leaving the box in a car. Check the box for best-before guidance.
